Studies on the Fatty Acid Composition of Sweet Persimmons (Diospyros kaki L.)


Abstract
This experiment was carried out to examine the effects of plant growth regulators (ethephon, daminozide, paclobutrazol) on fatty acid composition in flesh and seeds of ¢¥Fuyu¢¥ persimmon. In addition, the fatty acid composition in seeds of the other eight cultivars of persimmon fruit was also determined. The followings are the results obtained from this experiment. 1. In flesh of ¢¥Fuyu¢¥ cultivars treated with 1,000ppm paclobutrazol, all fatty acids were confirmed to be saturated forms. Especially almost all saturated fatty acids were consisted of myristic acid. In contrast, in flesh of untreated fruits, the contents of saturated and unsaturated ones were 39.7 and 60.4%, respectively. 2. No difference was found among all treatments of ¢¥Fuyu¢¥ seeds used except two treatments of ethephon 100ppm and ethephon 50ppm + GA 50ppm in the contents of saturated and unsaturated fatty acids, respectively. The contents of saturated fatty acid in both treatments (ethephon 100ppm and ethephon 50ppm + GA 50ppm) were 30.64% and 31. 41 %, respectively, while the contents in other treatments were almost same as the contents in control with 25% - 27%. In case of unsaturated fatty acid, the contents showed 69.36%, 68.59% and 73-75% in the above order. 3. In seeds of eight persimmon cultivars, monoglyceride, diglyceride, and free sterol were observed. Free fatty acids and triglyceride, however, were not confirmed in ¢¥Jiro¢¥ and ¢¥Fuyu¢¥, respectively. 4. In seeds, the contents of oleic acid, linoleic acid, and palmitic acid were relatively higher than other fatty acids, and six more fatty acids were contained in seeds than in flesh. 5. There was a general trend that higher contents of unsaturated fatty acids were examined in seeds than in flesh. This finding suggests that seeds contain nutritionally high quality of fatty acids.
